If you love avocado, chevre cheese, mixed salad greens tossed in olive oil, and an over-easy egg on top. . . then our Green Goddess Toast is has got to be a part of your weekend brunch menu!

The next few weeks are all about family, at least they to me they should be....kind of. I was listening to a stepmom podcast this week, The Stepmom Club, and the woman being interviewed was talking about the importance of self care. She of course was talking about for stepmoms, but self care is important for all and this time of year it is no different. These next few weeks will be full of family fun and chaos, but you can't forget about you during these next few weeks.
I don't mean that you need a day at the spa or a daily massage. I am simply saying that you need to take care of you in order to keep your sanity. Most days for me this comes in the way of a workout, but there will be days when an hour at the gym, on the treadmill, or on the road where this isn't possible. Those are the mornings I get up 20 minutes early in order to have a cup of coffee in silence or while reading. Anyway you slice it, you have to find a few minutes to breathe.
So today's fit tip isn't a new workout, it isn't a list of dos and don'ts. It is simply a reminder:

Ingredients
- 4 slices sourdough bread, toasted
- 2 avocados, thinly sliced
- 2 cups spinach, tossed with olive oil, salt/pepper
- 4 eggs, cooked to desired doneness
- 1 cup chevre cheese, crumbled
- 1 teaspoon red pepper flakes
- microgreens, to garnish
- sea salt and pepper, to taste
Instructions
- Place each toast on a serving plate, top with avocado slices, tossed spinach, an egg, 1/4 cup chevre cheese, 1/4 teaspoon red pepper flakes, and microgreens.
- Enjoy!
