You know those days when you just need to grab a quick bite to eat for lunch or dinner on the way out the door?! Yup. I think we all know exactly how those days go... the dilemma is real! Let's be honest, most Americans swing through a drive-thru on their way to this or that AND forget that with just a little bit of effort, there's a cheaper and healthier way to grab food on the fly. It's simple to add six ingredients to your grocery shopping list and then you'll have this recipe ready to go lickty-split. If you really want to go simple-- I suggest using any online grocery pick up. Most stores have them now and it's the bomb.com for reals! I literally use Walmart's once a week. I LOVE IT! It makes my mom life... happier. :) Carter and I ate this meal together and he totally liked it (he especially loved the mini tortilla bowls)!!What is Cotija Cheese?
Cotija is a Hispanic-style cheese named after the town of Cotija in the Mexican state of Michoacán. This hard, crumbly Mexican cheese is made mainly from cow's milk. When the cheese is made, it is white, fresh and salty thus bearing immense resemblance to feta cheese.Is there a Substitute For Cotija Cheese?
A good substitute would be Feta cheese which is also soft and salty. Trader Joe's makes a good lower-fat Feta which we like a lot. For the aged cotija, substitute: Parmesan or Romano cheese.What is the difference between Cotija cheese and Queso Fresco?
Queso fresco-- the name means "fresh cheese" and that means that it's very young. It's not dry like cotija and anejo cheese; however, it is generally crumbled in the same way. It's softer, a bit creamier, and much more mild in flavor than cotija. Salty, crumbly, and flavorful cotija adds another layer of flavor and creaminess to so many dishes.

Can you believe it's November? Man oh man this year has been flying by. I can't believe that it is almost Christmas. With the end of the year schedules seem to get a bit crazy, aren't they always crazy though? The cold gets a little colder and the bed a little warmer. And fitness plans seem to fly right out the window. Well, not today! Today we are going to grab a friend and get in some much needed friend time while also getting in a great sweat sesh. If you don't have a sweaty friend make one! And quick! Don't be shy, introduce yourself to someone at the gym. Don't belong to a gym? Find someone in your neighborhood to go walking with. I get that this may require getting out of your comfort zone but having a workout buddy can definitely motivate and help you keep those workout plans. This week's workout is a high rep workout, but you aren't meant to do all those reps by your lonesome. Grab a friend, divide up the reps however you need to in order to get it done. While one partner works the other rests, except for the last exercise, that one you do together.We love to hear about your magical cooking moments.
