Roasted Rosemary Sweet Potatoes with Cranberry Chevre Recipe
I adore chevre goat cheese! It's creamy and for the most part... more mild than the crumbled goat cheese varieties. But, let's take it up a notch at the holidays with Cranberry Chevre. It'll delight your tongue with every savory bite! Truly amazing. It's a seasonal item that I've found at it Trader Joes, Costco, or some grocery stores carry it during the holidays at nicer cheese counters. The flavor could also duplicated with a combination of plain chevre cheese and dried cranberries, if the original is not available.Roasting Vegetables in the Oven
Roasting vegetables in the oven is a simple process that works well for most root vegetables. Try it with winter squash, any variety of potato, carrots, celery root, onions--mix and match them too! It's so much fun to create with this simple technique. Then mix up the herbs and garnishments to go on top or don't do any garnishing at all... it all works! Roasting in the oven is a simple and healthy way to get your veggies!What temperature is best for roasting vegetables in the oven?
- Preheat oven 400 degrees F.
- Coat cookie sheet with cooking spray; set aside.
- Combine sweet potatoes, olive oil, rosemary, salt and pepper in mixing bowl; toss to coat.
- Evenly spread mixture onto prepared pan.
- Bake 35-40 minutes or until lightly browned and roasted; stirring twice.
- Place into serving dish and top with cranberry chevre.
- Garnish with additional rosemary if desired.
- Serve warm and Enjoy!

It is Halloween weekend and we are ready to play at my house. Halloween weekend also means birthday weekend for my little guy, the sugar is flowing and we are loving it! Once upon a time I imagined myself being that mom that would have non sugar options for Halloween. I had grand plans of limiting candy intake and forcing my kids to live "healthy" lives. Those plans are long gone and not because I gave up but because I realized that was not a healthy life.
Instead of limiting my kids or myself I enjoy my treats but also make sure there are lots of options around the house. I let my kids enjoy the day, making memories that include eating birthday cake and following it up with mounds of candy.
I know I have lost a lot of you at this point in time. You are convinced that you certainly can't eat healthy if left to your own devices, and there is definitely no way your kids could or would. If this is your thought right now you have missed the point. Make memories and enjoy life! Allow yourself to enjoy this Halloween weekend.
Now, I am still here with a sweaty workout for your weekend, but not in preparation for the food to come or as a punishment for the candy that has already disappeared. Nope.
