Our Banana Chocolate Chip Muffins Recipe are flavorful and moist intermingled with bursts of chocolate. Baking with bananas adds nutrition and moisture plus there's no better way to use up those overripe bananas you've got hanging around! Today's banana bread muffins have butter, applesauce, bananas, eggs, sugar, lemon juice, and baking soda plus a handful of dark chocolate chips!

Why we love our Banana Muffins
We love these banana muffins so much. The original recipe came from my Gram (the inspiration for our blog), over the years I've made a few changes to make them healthier. Like reducing the fat by adding applesauce and replacing whole eggs with egg whites to reduce fat and cholesterol. I promise you'll never be able to tell the difference at all!The benefit is not feeling quite so guilty about adding in the chocolate chips--totally kidding! Our banana muffins are very good all on their own but those chocolate chips take them right over the top. :)
How to make our Banana Chocolate Chips Recipe
Banana Chocolate Chip Muffins Recipe will be a must have around your house. If you happen to have a few left hanging around, just toss them in a zip lock freezer bag then into the freezer. They keep great for 4-6 weeks so they're ready to go anytime!- Preheat oven to 350 degrees F.
- Line muffins with paper liners or spray with cooking spray.
- In a large mixing bowl combine butter and sugar; mix 2-3 minutes until light and fluffy.
- Add eggs one at a time; mixing and scraping with each addition.
- Add applesauce, banana's, lemon juice; mix until smooth.
- Add flour and baking soda; mix until 80% incorporated (do not over mix- a few lumps are fine)
- Gently fold in chocolate chips using a wooden spoon.
- Divide batter evenly into paper liners.
- Bake 18-22 minutes or until inserted toothpick removes clean.
- Remove from pan and cool on racks.

- If you live 3,000 feet above sea level or more it is considered high elevation and may take longer to cook/bake.
- Adjustments are needed for 5000+ feet and above:
- Reduce baking powder: for each teaspoon, decrease 1/8 to 1/4 teaspoon.
- Reduce sugar: for each cup, decrease 2 tablespoons.
- Increase liquid: for each cup, add 2 to 4 tablespoons.
- Increase oven temperature by 25 degrees F.
- Check if it is done a little early.
- This takes some trial and error to get it right for you.

I am really holding on to that time in the sun and trying to forget the rest of it. My heart thrives in the sunshine, it also smiles when it is warm and working.
This week's Fit Friday I am coming at you with a workout to keep that heart warm and working, even when the wind is blowing and snow is threatening.
We are going to focus on that core with a bit of twist, no boring sit-ups for us. You are going to need a weighted medicine ball for this workout, for most people 8-14lbs would be great.
