So... if you've been with us for a while... you probably know that this banana bread is Gram's. Gram rocked her cooking show in the 60's and our blog is in honor of her.  I'm (Madeliene) even named after her! My middle name is Louise. She died of breast cancer when I was 2 years old. How to make Coconut Banana Bread Recipe

  • Preheat oven to 350 degrees.
  • Coat 9x5 loaf pan with cooking spray; set aside.
  • In standing mixer cream butter, add sugar, mix 2-3 minutes.
  • Add eggs one at a time; beating 1 minute and scrapping with each addition.
  • Add applesauce, lemon juice, coconut flavoring, and mashed bananas; mix to incorporate. 
  • Combine flour, baking soda, and sea salt in bowl and whisk to combine.
  • Add all at once to wet, mix just until moistened- okay if lumpy.
  • Evenly spread into prepared pan.
  • Evenly sprinkle top of batter with shredded coconut.
  • Bake 35-40 minutes or until a toothpick inserted removes clean.
  • Remove and cool 5 minutes, turn out and complete cooling.
  • Slice and Enjoy!

Helpful baking tips for higher elevations:

  • If you live 3,000 feet above sea level or more it is considered high elevation and may take longer to cook/bake. 
  • Adjustments are needed for 5000+ feet and above:
  • Reduce baking powder: for each teaspoon, decrease 1/8 to 1/4 teaspoon.
  • Reduce sugar: for each cup, decrease 2 tablespoons.
  • Increase liquid: for each cup, add 2 to 4 tablespoons.
  • Increase oven temperature by 25 degrees F.
  • Check if it is done a little early.
  • This takes some trial and error to get it right for you.

Fit Friday with Nichole 

I have the rainy day blahs! The rainy day blahs make it hard to get myself motivated to run. I don't know about the rest of you, but spring days with hints of summer get me excited for the sun and when we have days without all excitement, energy and motivation go right out the door. When the clouds come rolling in I have found that running circuits are perfect. I do short bursts of weights and cardio, only gearing up for one thing at a time. Which brings us to this week's workout. I am in the middle of race training, which means I have miles to get done. Instead of thinking through miles, dreading the yucky weather or the mindless treadmill, I am chunking up the run and throwing in some resistance work.
