Today's Chilled Apricot Lemon Soup is a lovely but simple cold soup--a beautiful balance fruity, tart, with a touch of sweet. It's a delightful way to start off an evening of entertaining or it'd be perfect for a ladies brunch too. Today's recipe is sweetened with Truvía® Nectar- which I am totally loving!!Ingredients in Chilled Apricot Lemon Soup Recipe
• Apricots- are a great source of many antioxidants, including beta carotene and vitamins A, C, and E. What's more, they're high in a group of polyphenol antioxidants called flavonoids, which have been shown to protect against illnesses, including diabetes and heart disease. • Fresh Lemon- Lemons are an excellent source of vitamin C and flavonoids, which are antioxidants. Antioxidants help remove free radicals that can damage cells from the body. These nutrients can help prevent diseases and boost health and wellbeing are some of the possible benefits of consuming lemons. • Truvia Nectar- Low calorie sweetener and used as a sugar replacer. • White Vinegar- may have significant health benefits due to its acetic acid content, including blood sugar control, weight management, reduced cholesterol and antimicrobial properties. • Sea Salt- is mostly composed of sodium chloride, a compound that helps regulate fluid balance and blood pressure in the body. Since it's minimally processed, it contains some minerals, including potassium, iron, and calcium.How to make Chilled Apricot Lemon Soup Recipe
- In a large sauce pan over medium heat combine apricots and water.
- Simmer 12-15 minutes or until apricots are very soft.
- Remove from heat, carefully place in blender, blend until smooth.
- Add Truvía® Nectar , lemon zest, lemon juice, white wine vinegar, sea salt, and vanilla.
- Blend on high for 2-3 minutes. (the longer blend time brings out the flavors)
- Chill completely in fridge.
- When ready to serve, place in small bowls or ramekins and add lemon zest.
- Serve and Enjoy!
A Story about Chilled Apricot Lemon Soup Recipe
I have a fun story about how these apricots came into my life... I recently moved and have been walking my dogs around our new neighborhood, just a little envious of all the fruit trees I kept spying in yards. One morning I was eyeing some apricots and even snuck one or two to enjoy on our morning walk but I was secretly wishing I could have more to have fun creating in the kitchen with. THEN, the very next day, a sign appeared hanging from the tree branches saying, "Pick and Enjoy while they last" so I ran home and grabbed a big bowl and picked! It was so awesome and that's the story of how these little guys came into my kitchen. It is Fourth of July weekend! I hope that you have all been able to make plans and surround yourself with friends and family this holiday weekend. Last year was a chance to make new traditions and decide what is really important. Are there new traditions that you are carrying on this year? Old traditions you are excited to return to?
My family is looking forward to enjoying our favorite mountains before coming back to our favorite firework show. Pretty much the perfect Fourth of July weekend for this momma!
With holiday weekends and special events I love to have fun with the workouts. This may mean a fun run, a gorgeous hike, or a fun sweat sesh in the gym. This weekend I am hoping to get in a bit of everything! Including this fun workout!
