Today's Cranberry Pecan Bars Recipe is always a crowd pleaser... all your guests will rave about this beautiful dessert! It's the perfect ending to your holiday gathering or it's perfect to take along with you to one!How to make Cranberry Pecan Bars Recipe
- Preheat oven 350 degrees F.
- Coat 8x8 baking dish with cooking spray.
- In mixing bowl combine pecans, graham cracker crumbs, 2 tablespoons sugar, oats, butter, and butter.
- Evenly press into bottom of prepared baking dish.
- Bake for 9-11 minutes or until edges are lightly browned.
- Cool completely on wire rack.
- In large mixing bowl beat cream cheese and 1/3 cup sugar until smooth.
- Add orange juice and vanilla; cream.
- Gently fold in whipped cream.
- Evenly spread over crust and refrigerate.
- Cranberry Topping:
- In a medium sized sauce pan over medium high heat; combine cranberries, 1/4 cup sugar, cranberry sauce, and water.
- Bring to gently simmer; stirring continuously and cooking 2-3 minutes or until sauce thickens.
- Remove from heat and allow to cool.
- When ready to serve cut pecan bars, place on serving plates, add 2 tablespoons cranberry topping, a dollop of whipped cream, and mint sprig to garnish.

Fit Friday with Nichole
It is the last weekend before Christmas. No one was still, especially not a mouse (we have a puppy that will happily catch a moving mouse). My brain is the least asleep thing of them all. As I go through my lists, checking off items and crossing out others, I find myself needing to go for a run.
I have found that running is often a chance to clear my head. It is amazing how often stepping away from the problem/moment/etc brings clarity and the ability to refocus.
My husband is trying to get a bunch done before the end of the year and my older stepdaughters' are at their mom’s house, so to the treadmill in the garage I go. Thankfully I really don't mind the treadmill, give me something entertaining to watch and I am good to go for a while.
This weekend I am aiming for race paces. If you aren't sure what your race paces are no worries, you can still jump in on the fun. Instead of aiming for a pace you are going to go 5 speed taps up for each set. So marathon race pace will be +5, half marathon pace will be +10 and so forth.
After a solid run I am going to finish up my workout with some solid core work. Yes, those are push-ups you see in my core workout. They belong there! So engage that core and do some work!
