Parmesan Pine Nut Artisan Loaf

Parmesan Pine Nut Artisan Loaf is so simple to make and perfect for the holidays!
Ingredients
  • 1 1/2 cups white whole wheat flour
  • 1 1/2 cups unbleached flour
  • 1¼ teaspoons sea salt
  • 1/2 teaspoons instant dry yeast
  • 1½ cups hot water
  • 3/4 cup grated parmesan cheese, divided
  • 1/3 cup pine nuts
Instructions
  1. Mix the dry ingredients in a large bowl, stirring by hand, add water and mix until moistened, cover entire bowl with saran wrap that has been generously coated with cooking spray.
  2. Let sit for at least 12 hours.
  3. Turn out dough onto a floured surface, add 1/2 cup parmesan cheese and pine nuts, gently knead to incorporate, pull sides in, and flip the loaf over.
  4. Cover again with the same saran and let raise for 45 min or until double in size.
  5. Heat the oven to 450 degrees F with ceramic dutch oven and lid in the oven.
  6. Carefully place dough in dutch oven, sprinkle 1/4 cup shredded parmesan on top of dough, replace lid, and cook for 25-27 minutes or until golden brown.
  7. Cool on a wire rack.

 Brrrrr! My house is cold this morning. I finally broke down yesterday and turned the heat on for the sake of my little ones, specifically my two year old that loves to run around naked. I know the temptation is to snuggle in and turn on Netflix when that cold hits, but there are alternatives. Working out when it is cold outside is a great way to get warm, and if you are running on the treadmill to work up a sweat without the frigid temps you can still enjoy your Netflix! Today's workout is fueled by cold temps and the desire to watch Netflix!

Today's treadmill workout uses race paces, paces that you may not know and that is just fine. You can still get this workout done and done well without having those exact paces. If you have at least one of those numbers use it and adjust accordingly. If you are going from scratch you are going to go straight from feel.

The marathon mile should feel solid and doable, if you are struggling with it you need to slow it down.
Each pace after that should be at least 30 sec per mile faster. For example; if I raced my marathon at 8:30 minute miles (7.0), I can guesstimate my half marathon pace to be about 8 min miles (7.5), my 10k to be 7:30 minute miles (8.0) and my 5k pace to be about a 7 minute mile (8.5). You may find that this is too easy or too hard, adjust as needed. But work hard, work strong, and get warm!
