Infused Olive Oil:

  • Organic Extra Virgin Olive Oil
  • fresh basil
  • kumquat zest
  • sea salt & pepper

Jackfruit Marinade Recipe:

  • green jackfruit
  • sea salt
  • Organic Extra Virgin Olive Oil
  • kumquat zest & kumquat juice
  • sea salt & pepper
  • Additional Ingredients:
  • kumquats
  • purple radish
  • fresh basil leaves
  • premade whole wheat pizza dough

How to make Jackfruit Vegan Pizza Recipe

Infused Olive Oil:

  • Combine and allow to sit for 30 minutes.

Jackfruit Marinade: 

  • Combine all ingredients and allow to sit for 30 minutes.
  • Preheat oven to 475 degrees F.
  • Press and shape pizza dough onto pizza stone or pan, folding 1/4 inch around the outside for edge.
  • Using 2-3 tablespoons of the infused Organic Extra Virgin Olive Oil, evenly coat the center of the crust.
  • Evenly spread the jackfruit, half of the cut purple radish, kumquat slices, and bake 18 minutes.
  • Add remaining purple radish, fresh basil leaves, and bake 3-4 minutes more.
  • Drizzle with remaining Infused Organic Extra Virgin Olive Oil, sprinkle of sea salt, and serve warm.

Creating our Vegan Pizza Recipe

It all began with a simple infusion of kumquat zest and minced basil into a 1/3 cup Organic Extra Virgin Olive Oil. Then, I tossed the shredded green jackfruit in a similar combination and let them both sit for about 30 minutes to get all happy and cozy to meld the flavors. Our Jackfruit Vegan Pizza really began taking shape--I thinly slicing the kumquats and purple radish, pressed the pizza dough onto the pizza stone, and gave it a healthy rub down with our Infused Organic Extra Virgin Olive Oil. Sprinkled on the seasoned jackfruit, and the rest of the ingredients excepting the basil leaves. Then tossed it into the oven! Delish. Fit Friday with Nichole

 School is out for summer!

The kids are excited beyond measure and I am ready to get some play time in the sunshine. 

I am also already trying to figure out how to stick with some wort of schedule and not have complete chaos running through my house. I have seen a video making the rounds lately of women saying something along the lines of,  "I am happy to go with the flow. What time does the flow start?" That is how I feel approaching summer. 

Going with the flow and loving all that summer has to offer means I have to keep some sort of a schedule for myself. Getting in a workout does a lot to keep a smile on my face and sanity coursing through my veins. I have learned at the beginning of summer I can often get the kids to workout with me, after a couple of weeks the novelty wears off and they would rather get their exercise the way I did as a kid, riding my bike and playing with friends. 

This week I am doing a kid friendly Tabata to kick off summer with the kiddos. Make it fun with rewards, challenges, or whatever gets your house going.
